Dereksi bakteri coliform dan escherichia pada minuman es jeruk di cafe lesehan pantai talise palu

ABSTRAK


Penelitian berjudul “Deteksi Bakteri Coliform dan Escherichia coli Pada Minuman Es Jeruk Di Cafe Lesehan Pantai Talise Palu” telah dilaksanakan dengan tujuan untuk mendeteksi dan mengetahui jumlah bakteri Coiform dan Escherichia coli pada minuman es jeruk di Cafe Lesehan Pantai Talise Palu. Penelitian ini bersifat deskriptif, dengan menggunakan metode Standar Plate Count (SPC) dan Most Probeble Number (MPN). Berdasarkan hasil penelitian dari uji SPC menunjukkan bahwa 50 % Cafe Lesehan tercemar karena tidak memenuhi syarat baku mutu yang di tetapkan BPOM yaitu Cafe A sebanyak 1,1 x 104 CFU/mL, Cafe C sebanyak 4,3 x 104 CFU/mL, Cafe D sebanyak 1,5 x 104 CFU/mL, Cafe H sebanyak 1,8 x 104 CFU/mL. Pengujian metode MPN dari terdapat 30 % Cafe Lesehan yang tercemar oleh bekteri Coliform pada minuman es jeruk karena tidak memenuhi syarat baku mutu yang ditetapkan oleh BPOM yaitu pada Cafe A sebanyak 143 x 101 MPN/mL, Cafe H sebanyak 2,33 x 101 MPN/mL, dan Cafe J sebanyak 1,23 x 101 MPN/mL. Berdasarkan pengujian coliform fecal dan uji Escherichia coli diyatakan semua sampel adalah negatif.

ABSTRACT
This research entitled “The detection of Coliform and Escherichia Coli bacteria on lemon ice drinking at Lesehan Cafe, Talise Beach, Palu” has been conducted in order to detect and find out the number of Coliform and Escherchia coli bacteria on lemon ice drinking at Lesehan Cafe, Talise Beach, Palu. This was a descriptive research using Standard Plece Count (SPC) method and Most Probeble Number (MPN). Besed on the SPC testing, it was found the 50% of Lesehan Cafe contaminated due to the unrequirement of legal standard of quality stated by BPOM namely Cafe A wes 1,1 x 104 CFU/mL, Cafe C was 4,3 x 104 CFU/mL, Cafe D was 1,5 x 104 CFU/mL, Cafe H was 1,8 x 104 CFU/mL. Based on the method testing it was found that 30% of the lemon ice drinking at Lesehan Cafe was contaminated by Coliform bacteria because of unrequirement of legal standard of quality stated by BPOM namely cafe A was 143 x 101 MPN/mL, cafe H was 2,33 x 101 MPN/mL and cafe J was 1,23 x 101 MPN/mL. Besed on the Coliform and Escherchia coli testing result, it is stated taht all the sample was negative.
